When we say “clean” what we mean is no oils, processed sugars (cane, corn, beet, etc). artificial sweeteners, or grains.
Tips:
-sweat onions, the liquid from the onions will coat the food you are cooking and give it a body. If you sweat them long enough, especially sweet onions, the oniony flavor will go away and you are left with a sweet glaziness that coats food.
– chopped dates provide a tone of sweetness. Add them when you first add liquid to a dish and they will dissolve over time and add a ton of sweetness.
– cooking macerated dates for extended period of time will render a very sweet sauce that is reminiscient of caramel or even maple syrup.
– I do not believe in fat free cheese. That being said, we choose to use cheeses with lower fat contents like parmesan, feta etc. A good rule of thumb is if there are fewer than 5g of fat per serving in the cheese then we feel ok using it. Most of the clinical data nowadays stresses a reduction in blood sugar as the single most important thing a person can do to instantly improve their health in a multitude of areas. We tend to go by that.
– When I say we do not use sugars, I mean as an ingredient. Obviously there are naturally occuring sugars in every fruit and most veggies. We will harness these sugars in the cooking process and typically will leave the entire fruit in the dish.
